Gluten and Dairy Free Strawberry Cake

Yummy Strawberry Cake

We were having last-minute company over this evening so I quickly went through my recipe box looking for a dessert that could be easily altered to be gluten and casein free. The icing melted beautifully into the cake and everyone went crazy over it-here it is.
GFCF Strawberry Cake
1 Box Betty Crockers Gluten Free Yellow Cake Mix
3/4 C Canola Oil (I imagine you could use applesauce if you're worried about calories)
1/2 C Water
4 Eggs
1/2 C Thawed Strawberries
1 3-oz. Package of Strawberry Jello
Mix all ingredients in a hand-held or stand mixer. Bake in a 10x13 pan for 25-30 minutes at 350 degrees.
Icing
1/2 C Thawed Strawberries
1/2 C CF Butter (less for a thicker icing)-I use Smart Balance Light with Flax Oil
1 lb. Powdered Sugar
Beat all ingredients thoroughly and ice cake while it is hot if you want it to melt into the cake.
My Coconut Cream Icing goes very well with this cake also!

I have not tried this but many people say that to replace 1 egg you can microwave 1 Tbsp flax seed with 3 Tbsp. water for 1 minutes and then just let it set for a few minutes. Also, I've heard that Ener-G has a good egg replacement. I'm not sure how many people this cake serves, but when I made it this cake fed 6 with leftovers. Next time I make it, I'll take pictures, time how long it takes, and figure out how many it serves. Then, I'll post it on my new site, cookingglutenfree.blogspot.com

Hello,
Awesome recipe. My boyfriend is both dairy and gluten sensitive, so I am looking forward to making this cake. He is also sensitive to eggs. Have you tried an egg substitute? How many people does this cake serve?
