Easy Sweet and Sour Chicken

2-4 Tbsp. Olive Oil

Cooked Brown Rice

1 small onion, finely chopped

1 large bell pepper, chopped

1 clove garlic, finely chopped

1/2 tsp. salt

1/4 tsp. pepper

1 lb. boneless, skinless chicken, cubed

1 can pineapple chunks, drained

1 tbsp. cornstarch

1/3 C white rice vinegar

1 tsp. dried mustard

1 tbsp. ketchup

1/4 C brown sugar

1 tbsp. gluten free soy sauce or tamari sauce

1. Cook rice.

2. In small bowl, mix together the cornstarch, rice vinegar, dried mustard, ketchup, and brown sugar, set aside.

3. Heat 2 Tbsp. oil in large skillet, add onion, bell pepper, and garlic. Cook about 2 minutes, or until crisp tender. Remove from skillet and set aside.

4. Pour remaining olive oil in skillet. Add chicken, salt, and pepper and cook til no longer pink.

5. Add onion mixture back to skillet, along with the pineapples, sweet and sour sauce mixture, and soy sauce. Stir together until heated through and sauce thickens. Add cooked rice.

6. Enjoy!

This sounds good. I am trying to cut down on Gluten and dairy as it seems I have little tolerance lately for either. This sounds like a decent recipe.
